Grilled Salmon with Roasted Corn Relish
- 4 whole Salmon Fillets
- 2 teaspoons Olive Oil
- 1 teaspoon Pepper
- 1/2 teaspoons Sea Salt
- 1/2 teaspoons Chili Pepper Flakes
- 1 Tablespoon Olive Oil
- 3 cloves Garlic, Minced
- 1 whole Purple Onion, Diced
- 3 ears Corn, Cut Off The Cob
- 1/2 cups Red Pepper, Diced
- 1/2 cups Green Pepper, Diced
- 1/4 cups Water
- Salt And Pepper, to taste
- Heat grill or broiler.
- Brush salmon with olive oil and season with spices.
- Grill salmon about 10 minutes or until it flakes easily with a fork.
- In a cast iron skillet, add oil, garlic, and onions.
- Let bloom 2 minutes.
- Add corn, peppers, water, and spices.
- Let cook about 5 minutes, until veggies are crisp-tender.
- Serve salmon over corn relish and enjoy.
