Buttermilk Biscuits

  1. Combine flours, xanthum gum, sugar, baking powder, baking soda, & salt.
  2. Mix well.
  3. Add shortening.
  4. Mix together with fork or pastry blender until mixture looks like fine crumbs.
  5. Make a well in the middle & add 1 cup of buttermilk.
  6. Mix together until soft dough forms & leaves side of bowl, adding more buttermilk as needed to reach this consistency.
  7. (If don't have buttermilk, can substitute with putting 2 tbsp of vinegar in measuring glass then add enough milk of your choice & stir.
  8. Let set 5 minutes.
  9. Stir again & add to recipe.)
  10. Preheat oven to 450F.
  11. Form into 2" balls then flatten some.
  12. Place on ungreased cookie sheet.
  13. Bake for 15-20 minutes or until golden brown.
