Outstanding vanilla mousse cheesecake
- 1 CRUST
- 40 vanilla wafer cookies about 1 1/2 cups ground up fine
- 1 tsp ground cinnamon
- 4 tbsp melted butter
- 1 CHEESECAKE FILLING
- 3 packages 8 oz cream cheese softened
- 1/4 cup sour cream
- 1 cup sugar
- 1 pinch salt
- 3 eggs room temperature
- 1 tbsp lemon juice
- 1 tbsp pure vanilla extract
- 1 TOPPING
- 1 packages 8 oz cream cheese softened
- 1/4 cup sugar
- 1 tsp pure vanilla extract
- 1 8 oz container of cool whip thawed
- pre heat oven to 325F
- mix wafer crumbs, cinnamon, and butter together and press onto the bottom of a 9 inch spring form pan
- Beat 3 packages of cream cheese with 1 cup sugar, 1 small pinch of salt,1/4 cup sour cream,1 tablespoon vanilla and 1 tablespoon lemon juice adding one egg at a time mixing well
- Pour in to crust and bake for 50 to 55 minutes or till almost set
- Cool completely in pan
- Beat remaining cream cheese, sugar, and vanilla together then fold in cool whip
- Spread over cheese cake and refrigerate for at least 4 hours and remove rim of pan before serving
- Enjoy
