Bean And Cheese Burritos Recipe
- 1 (16 ounce.) can refried beans
- 1 med. tomato, coarsely minced
- 1 teaspoon chili pwdr
- 1 (4 ounce.) pkg. shredded sharp cheddar cheese
- 8 (7") flour tortillas
- 1 (12 ounce.) jar mild thick & chunky salsa
- Lowfat sour cream (opt.)
- About 30 min before serving:

- Preheat oven to 400 degrees.
- In 2 qt saucepan over medium heat, cook refried beans, tomato and chili pwdr till heated through; remove from heat.
- Reserve 1/4 c. cheese for topping; stir remaining cheese into bean mix.
- 2.
- Spread scant 1/2 c. bean mix onto center of one tortilla, roll up and place burrito in 13"x19" baking dish.
- Repeat with remaining bean mix on tortillas.
- Spoon salsa over burritos; sprinkle with reserved cheese.
- Cover dish with foil and bake 10 min.
- Remove foil, bake 5 min, uncovered.
- Serve with lowfat sour cream if you like.
