Hash-Brown Medley
- 4 each potatoes peeled or unpeeled
- 1 each green bell peppers cit in pieces
- 1 each onions cut in cubes
- 4 each garlic cloves sliced
- 1 cup water
- 2 cups corn thawed or fresh,
- 1 large tomatoes diced
- Place the potatoes, green pepper, onion, and garlic in a nonstick frying pan with 1/2 cup of the water.
- Cook, stirring, over medium heat for 5 minutes.
- Add the remaining 1/2 cup water.
- Cover and continue to cook for another 10 minutes, stirring occasionally.
- Add the corn and tomato.
- Cook, stirring, for an additional 5 minutes.
