Chicken Rotini
- 3 boneless skinless chicken breasts
- 2 cups uncooked garden rotini pasta
- 2 garlic cloves, minced
- 2 cups broccoli florets
- 12 cup water
- 12 red sweet bell pepper, julienned
- 12 yellow bell pepper, julienned
- salt and pepper
- 14 cup parmesan cheese
- Cook the rotini per package directions.
- Cut the chicken breasts into bite-sized cubes.
- Add salt and pepper.
- Place in hot, oiled skillet with garlic and cook until done through.
- Add broccoli and water and cover skillet.
- Cook on high heat for 5 minutes or until broccoli is tender and water is gone.
- Add peppers, rotini and parmesan cheese.
- Mix together and serve.
