Arugula and Mozzarella Pizza with Garlic-Olive oil
- 1/2 each 100% Whole Wheat Pizza Dough, prepared (click to view recipe)
- 5 cups arugula (roquette) baby, well washed and dried, tough stems removed if any
- 1 tablespoon lemon juice or to taste, fresh
- 1 clove garlic or to taste, minced, optional
- 2 tablespoons olive oil, extra-virgin or as needed
- 1 x salt and black pepper to taste
- 13 cup olive oil
- 2 cloves garlic crushed
- 3/4 cup mozzarella cheese shredded
- Preheat the oven to 425 degrees F.
- Place the crushed garlic and olive oil in a bowl and whisk until mixed well.
- Set aside.
- Add the arugula in a large mixing bowl.
- Drizzle the olive oil over the greens.
- Season with salt and black pepper to taste.
- Gently toss until coated.
- Set aside.
- Prepare the pizza dough according the recipe or use store-bought pizza dough.
- Brush the crust with garlic oil and top with mozzarella cheese.
- Bake for about 12 minutes or until the crust is crispy and the cheese is metled and bubbling.
- Remove from the oven and top with arugula.
- Serve warm.
