Fusilli with Chicken and Feta
- 1 pound Fusilli
- 1 pound Chicken Breast
- 7 ounces, weight Feta
- 5 Spring Onions
- 1 bunch (small) Chives, Divided
- 2 Tablespoons Olive Oil
- Salt And Pepper
- Bring a large pot of water to a boil, salt the water and cook the pasta according to the packages instructions.
- Drain and keep warm.
- Meanwhile cut chicken breast and cheese into small cubes, and slice spring onions into rings.
- Chop chives finely.
- Heat olive oil in a large pan.
- Fry chicken cubes on all sides until golden.
- Add spring onions and continue cooking for about 2 minutes.
- Check if chicken is cooked through.
- Add cheese and about half of the chives.
- Add salt and pepper to taste.
- Mix chicken and cheese with pasta, adjust seasoning, and sprinkle with remaining chives.
