Okara Apple Cheesecake

  1. Cut the apples into quarters, remove the core and peel.
  2. Cut each piece into 6 or 8 wedges.
  3. Put all the filling ingredients into a pan.
  4. Cover with a lid and simmer until soft.
  5. (You can add the cinnamon at the last stage if you want.)
  6. Remove the lid and saute the apple slices until browned.
  7. Be sure to brown them properly at this stage.
  8. Note: Don't wash the pan afterwards, since it will be used again.
  9. Preheat the oven to 350F/180C.
  10. Put the ingredients into a bowl and mix together.
  11. Add milk, finely shredded cheese and sugar in a pan, and heat to dissolve the sugar and cheese.
  12. Add this mixture to the bowl with the ingredients.
  13. Finally, add the egg and lemon juice and mix well.
  14. It will be a very thick batter.
  15. Butter a tart mold and pour in the batter.
  16. Smooth out the surface.
  17. Line the top with the cooked apple slices.
  18. Start with the thicker slices around the rim, and overlap the slices going in circles towards the middle.
  19. Roll up a slice or two for the center.
  20. Bake for 40 minutes in a 350F/180C oven.
  21. In the meantime, make a quick glaze.
  22. Put 1 tablespoon of sugar in the pan used earlier to cook the apples, add 2 tablespoons of water, and heat.
  23. Turn off the heat when the sugar has melted.
  24. Brush the glaze on the freshly baked cake to finish.
  25. Cool, and chill in the refrigerator before eating.

  29. If you let it rest for a day in the refrigerator, it becomes really moist.
