Sauerkraut Salad With Carrots And Apples Recipe
- 1/4 c. salad or possibly extra virgin olive oil
- 1 1/2 teaspoon sugar
- 1 teaspoon caraway seed
- 1/2 teaspoon salt
- 1 teaspoon vinegar
- 1 lbs. sauerkraut, liquid removed
- 2 med. tart apples, peeled, cored and diced
- 3/4 c. grated carrot
- Combine oil, sugar, caraway seeds, salt and vinegar.
- Rinse and drain sauerkraut well, chop.
- Stir into oil mix.
- Add in apples and carrots; toss to mix well.
- Yields: about 6 servings.
