Sweet and Tangy Tuna-Stuffed Peppers

  1. In a small bowl, stir together tuna, celery, shallot (or red onion) and the drained Mandarin oranges.
  2. Add in red wine vinegar and mayonnaise.
  3. Season with salt and pepper to taste.
  4. Fill the bell pepper halves with the tuna mixture and refrigerate until ready to eat.
  5. If a stuffed pepper isnt your style, just chop up the bell pepper and add it to the tuna mixture.
  6. This is great used over a big salad for lunch, if youre going low-carb.
