Chicken Fettucini Recipe
- 6 boneless chicken breast
- 2 boxes fettucini noodles
- 2 env. Alfredo sauce mix (Pasta Prima from Kroger)
- 1 pt. Half & Half
- 1/2 c. low fat lowfat milk
- 1/2 stick diet butter
- 3/4 c. Parmesan cheese
- 1/2 teaspoon garlic salt
- 3 - 4 broccoli florets (for garnish, optional)
- 2 tbsp. almonds, sliced
- Cook chicken breast till done.
- Cold and cut into bite-size pcs and set aside.
- Cook noodles as directed.
- While noodles cook, add in Half & Half, lowfat milk and both envelopes of Alfredo sauce mix with butter and garlic salt in 3 qt sauce pan.
- Stir over low heat till consistency is smooth.
- Add in 3/4 c. Parmesan cheese and stir till sauce thickens.
- (More Parmesan cheese may be added till desired thickness is achieved.)
- Set aside.
- Drain and rinse noodles and return to large pan.
- Toss with sauce and chicken.
- Garnish with broccoli and almonds.
