Sweet and Spicy Cheesecake Bundles

  1. Sweet & Spicy Sauce: Add juices and squeezed fruit halves to large saucepan.
  2. Add all remaining ingredients except honey.
  3. Bring to boil on medium heat, stirring frequently; simmer 10 min.
  4. Stir in honey.
  5. Return to boil; cook 1 min.
  6. Cool to room temperature.
  7. Strain sauce; discard citrus halves.
  8. Refrigerate sauce until ready to use.
  9. Cheesecake: Mix graham crumbs, butter, 3/4 cup sugar (or 3 Tbsp.
  10. sugar for trial recipe) and five-spice powder.
  11. Press onto bottoms of 4 foil-lined half-steam table pans (or onto bottom of 1 foil-lined half-steam table pan for trial recipe).
  12. Set aside while preparing filling.
  13. Beat cream cheese, remaining 1 qt.
  14. sugar (or remaining 1 cup sugar for trial recipe), flour and vanilla in 12-qt.
  15. bowl (or in 6-qt.
  16. bowl for trial recipe) of mixer fitted with paddle attachment 1 min.
  17. Scrape paddle, side and bottom of bowl.
  18. Beat an additional 1 min.
  19. Blend in sour cream on low speed just until combined.
  20. Add eggs, 1 at a time, mixing after each addition just until blended.
  21. Pour evenly over crusts.
  22. Bake in 300 degrees F-convection oven 25 to 27 min.
  23. or until centers are almost set, rotating pans after 15 min.
  24. ; cool completely.
  25. Refrigerate several hours or overnight.
  26. Bundles: Remove Cheesecakes from pans.
  27. Trim and discard 1/4-inch-wide piece from each side; cut each trimmed cheesecake into 35 rectangles.
  28. Stack 5 phyllo squares for each bundle, brushing every other sheet with butter and drizzling 1/2 tsp.
  29. Sweet & Spicy Sauce between each layer.
  30. Brush top with butter.
  31. Place cheesecake piece in center of phyllo; drizzle with 1/2 tsp.
  32. Sweet & Spicy Sauce.
  33. Fold 1 corner of phyllo square over cheesecake, then fold 2 opposite sides of phyllo over cheesecake.
  34. Lightly brush edges of unfolded corner with water before folding over cheesecake.
  35. Press seams together lightly to seal.
  36. Place, seam-sides down, in single layer in parchment paper-lined sheet pans.
  37. Refrigerate 1 hour.
  38. Brush bundles with remaining butter.
  39. Bake in 400 degrees F-convection oven 6 to 8 min.
  40. or until lightly browned.
  41. Drizzle each with 1/2 tsp.
  42. Sweet & Spicy Sauce.
  43. Serve warm with 1 Tbsp.
  44. Sweet & Sour Sauce served with each bundle for dipping.
