Sparkling Blue Velvet Cupcakes
- 1 pkg. (2-layer size) white cake mix
- 1 pkg. (4-serving size) Jell-O Vanilla Instant Pudding
- 1 Tbsp. unsweetened cocoa powder
- 1 tsp. royal blue paste food colour
- 1/8 tsp. violet paste food colour
- 2 cups thawed Cool Whip Whipped Topping
- 1/2 cup fresh blueberries Whole Foods 3 For $10.00 thru 02/09
- 1 pkg. (9.5 g) strawberry popping candy
- Heat oven to 350F.
- Prepare cake batter and bake as directed on package for 24 cupcakes, blending dry pudding mix, cocoa powder and food colours into batter before spooning into prepared cups.
- Cool cupcakes in pans 10 min.
- ; remove from pans to wire racks.
- Cool completely.
- Pipe or spread Cool Whip onto cupcakes.
- Garnish half the cupcakes with blueberries and remaining cupcakes with candy.
