Pineapple Slaw
- 2 tbsp low-fat mayonnaise
- 2 tbsp nonfat plain yogurt
- 2 tsp Rice vinegar
- 1/8 tsp crushed red pepper
- 8 oz Pineapple chunks or rings, drained & coarsely chopped
- 2 cup coleslaw mix
- Whisk mayonnaise , yogurt, vinegar and red pepper in a medium bowl.
- Add pineapple and coleslaw mix and stir to combine.
- Place in fridge until ready to serve.
- Wonderful served on a crispy fish sandwich or served as a side.
