Almond Anise Biscotti

  1. Heat oven to 375F.
  2. Combine 1 cup sugar and butter in bowl.
  3. Beat at medium speed, scraping bowl often, until creamy.
  4. Add eggs, anise seed, vanilla and anise flavoring; continue beating until well mixed.
  5. Add flour and baking powder.
  6. Beat at low speed, scraping bowl often, until well mixed.
  7. Stir in almonds.
  8. Divide dough in half; shape each half into 11-inch log.
  9. Place 4 inches apart onto greased cookie sheet.
  10. Flatten each log to 2-inch width.
  11. Brush tops with egg white.
  12. Sprinkle with coarse grain sugar.
  13. Bake 25 minutes or until lightly browned and set.
  14. Cool 15 minutes on cookie sheet.
  15. Reduce oven temperature to 325F.
  16. Carefully place logs onto cutting surface.
  17. Cut into 1/2-inch diagonal slices with serrated knife.
  18. Place, cut-side down, onto ungreased cookie sheets.
  19. Return to oven.
  20. Bake 9 minutes; turn slices.
  21. Continue baking 8-10 minutes or until dry and crisp.
