Baked Oatmeal
- 2 cups uncooked quick-cooking oats
- 12 cup packed brown sugar
- 12 cup washed raisins (or a little of each) or 12 cup dried cranberries (or a little of each) or 12 cup frozen blueberries (or a little of each) or 12 cup dried apricot (or a little of each)
- 3 -4 tablespoons chopped walnuts or 3 -4 tablespoons almonds or 3 -4 tablespoons sunflower seeds
- 2 tablespoons wheat germ (optional) or 2 tablespoons ground flax seeds (optional)
- 1 tablespoon baking powder
- 1 12 cups nonfat milk or 1 12 cups plain soymilk
- 12 cup unsweetened applesauce
- 2 tablespoons butter, melted
- 1 large egg, beaten
- cooking spray
- Preheat oven to 375 degrees.
- Combine the first 6 ingredients in a medium bowl.
- Combine the milk, applesauce, butter, and egg.
- Add milk mixture to oat mixture; stir well.
- Pour oat mixture into an 8-inch square baking dish, or 9-inch pie plate, coated with cooking spray.
- Bake at 375 for 20 minutes.
