Low Fat Lemon Blueberry Muffin
- 1 34 cups white flour
- 12 cup whole wheat flour
- 34 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1 14 cups unsweetened applesauce or 1 14 cups pumpkin puree
- 1 egg
- 1 teaspoon oil
- 1 teaspoon lemon extract
- 1 tablespoon lemon zest
- 1 12 cups fresh blueberries
- Mix dry, mix wet.
- Add wet to dry til moistened.
- Fold in berries.
- Scoop into muffin pan.
- Bake at 400 for 25 minutes.
