Coconut Lime Chicken
- 1- 1/2 pound Chicken Tenders, Or Sliced Boneless Chicken Breast
- 2 Tablespoons Sugar
- 2 cloves Garlic, Minced
- 1 whole Jalapeno Pepper, Seeded And Minced
- 1- 1/2 teaspoon Ground Coriander
- 1/2 teaspoons Black Pepper
- 1/2 teaspoons Turmeric
- 1 cup Unsweetened Coconut Milk
- 1- 1/2 Tablespoon Soy Sauce
- 1- 1/2 Tablespoon Lime Juice

- Lay chicken in a shallow pan (like a 9x13 dish).

- In a large bowl, combine sugar, garlic, jalapeno pepper, coriander, pepper and turmeric.
- Mix and press the ingredients into the bowl to release the oils.

- Stir in the coconut milk (shake the can first!
- it will separate in the can until you shake it), soy sauce and lime juice.

- Pour marinade over chicken and let sit for 30 minutes in the fridge.
- 5.
- Spray the grill with oil or cooking spray, and grill tenders until done, about 1-2 minutes per side.
