Coconut Lime Chicken

  2. Lay chicken in a shallow pan (like a 9x13 dish).

  4. In a large bowl, combine sugar, garlic, jalapeno pepper, coriander, pepper and turmeric.
  5. Mix and press the ingredients into the bowl to release the oils.

  7. Stir in the coconut milk (shake the can first!
  8. it will separate in the can until you shake it), soy sauce and lime juice.
  9. 4.
  10. Pour marinade over chicken and let sit for 30 minutes in the fridge.
  11. 5.
  12. Spray the grill with oil or cooking spray, and grill tenders until done, about 1-2 minutes per side.
