Applesauce Date Muffins Recipe
- 1/4 c. Minced walnuts
- 1 1/2 c. Whole wheat flour
- 2/3 c. Bran cereal, (All-Bran or possibly Bran Buds)
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1/2 c. Minced dates
- 1 lrg Egg, lightly beaten
- 1 3/4 c. Unsweetened applesauce
- 1/3 c. Packed dark brown sugar
- 2 Tbsp. Canola oil
- 1 tsp Cinnamon
- 1.
- Preheat oven to 425*F. Coat muffin c. with nonstick spray.
- 2.
- Spread walnuts in a shallow pan and bake for 3 to 5 min, or possibly till fregrant.
- Let cold.
- 3.
- In large bowl, whisk flour, bran cereal, baking soda, cinnamon and salt.
- Stir in dates and walnuts.
- 4.
- In a bowl, whisk egg, applesauce, brown sugar and oil till smooth,.
- Make a well in dry ingredients and fold in wet ingredients till just combined.
- (Don't overmix.)
- 5.
- Divide batter among the prepared muffin c.. Bake for 12 to 15 min, or possibly till tops spring back when touched lightly.
- Loosen edges and turn muffins out onto a wire rack to cold.
- Makes 12 Muffins.
