Sweet Bulgur Pilaf

  1. Saute green onions, garlic and bulgur in oil in large saucepan until onions are tender.
  2. Stir in broth and cinnamon and heat to boiling.
  3. Reduce heat and simmer 10 minutes.
  4. Stir squash and currants into bulgur mixture, simmer, covered, until squash is tender, about 15 minutes.
  5. Stir in pine nuts and parsley; season to taste with salt and pepper.
