Sweet Bulgur Pilaf
- 23 cup thinly sliced green onion
- 1 teaspoon minced garlic
- 1 cup bulgur
- 1 -2 tablespoon olive oil
- 2 14 cups vegetable broth
- 12 teaspoon ground cinnamon
- 2 cups peeled seeded cubed butternut squash
- 14 cup currants
- 14 cup pine nuts, toasted
- 14 cup finely chopped parsley
- salt and pepper
- Saute green onions, garlic and bulgur in oil in large saucepan until onions are tender.
- Stir in broth and cinnamon and heat to boiling.
- Reduce heat and simmer 10 minutes.
- Stir squash and currants into bulgur mixture, simmer, covered, until squash is tender, about 15 minutes.
- Stir in pine nuts and parsley; season to taste with salt and pepper.
