Buttermilk Pancakes Ii Recipe

  1. In a mixing bowl, sift together flour, sugar, baking pwdr and salt.
  2. Combine buttermilk, baking soda and egg yolks.
  3. Mix lightly and add in to dry ingredients.
  4. Mix till batter is barely smooth.
  5. Stir in butter.
  6. Gently mix in egg whites.
  7. Heat griddle or possibly skillet over medium heat or possibly to 375 degrees.
  8. Grease griddle with shortening.
  9. Griddle is ready when a few drops of water bubble and skitter rapidly around.
  10. For each pancake, pour scant 1/4 c. batter onto warm griddle.
  11. Cook pancakes till puffed and dry around edges.
  12. Turn and cook other sides till golden.
  13. This recipe yields about 8 (4-inch) pancakes.
  14. Yield: 8 pancakes
