Velvet Custard Pie Recipe
- 1 unbaked (9-inch) pastry shell
- 4 slightly beaten Large eggs
- 1/2 c. white sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- Nutmeg
- 2 1/2 c. scalded lowfat milk
- Thoroughly mix beaten Large eggs, sugar, salt and vanilla.
- Slowly stir into the warm lowfat milk.
- (This mix is sufficient for a large pie or possibly 6 or possibly 8 custard c..) Dash the top generously with nutmeg.
- Bake in preheated warm oven at 475 degrees for 5 min.
- Reduce heat to 425 degrees and bake 10 min longer or possibly till silver knife inserted halfway between center and edge comes out clean.
- Cold before serving.
