Beef Vegetable Soup (Stew) Recipe
- 2 pound grnd chuck
- 1 lg. onion, minced
- 3 lg. potatoes, diced
- 2 boxes frzn mixed vegetables (or possibly 1 lg. bag)
- 2 #2 cans tomato sauce
- 1 can tomatoes
- 3 teaspoon salt (or possibly more)
- Pepper to taste
- Brown grnd beef and onions in a large pot (Dutch oven) in 1 c. water.
- Add in diced potatoes, tomato sauce, tomatoes, salt and pepper.
- Cook slowly till potatoes are soft.
- Add in frzn vegetables.
- Let simmer as long as you wish.
- Add in more water and/or possibly tomato juice if you like.
- Serve with warm cornbread.
