Ground Turkey Vegetable Soup Recipe
- 2 lbs. grnd turkey or possibly chicken (even hamburger)
- 2 lg. onions, 1 diced, 1 sliced
- 2 lbs. washed carrots, unpeeled to keep vitamins intact
- 6 celery stalks with leaves
- 2 lg. cans tomatoes
- 1 lg. can tomato sauce
- 6 lg. potatoes, washed, but not peeled, cubed
- 1 quart. water
- 1 quart. beef stock (can be instant or possibly reduce your own)
- Salt and pepper to taste
- Saute/fry minced onion, grnd meat and celery.
- Strain off any extra fat.
- Return to stock pot.
- Add in sliced onions, sliced carrots and diced potato.
- Add in tomatoes and tomato sauce.
- Then add in water and stock.
- Cook all ingredients over medium low heat for about 1 hour.
- Season to taste with salt and pepper.
- You may add in any leftover vegetables in the refrigerator.
- Healthy, filling and good way to use leftover vegetables.
