Simple Carrot and Egg Salad
- 1 Carrot
- 2 Boiled eggs
- 2 tsp Whole grain mustard
- 3 tbsp Mayonnaise
- 2 tsp Lemon juice
- 1 dash Salt and pepper
- 1/2 tsp Sugar
- 1 dash, optional Black pepper, parsley for garnish
- The ingredients are only 1 carrot and 2 hard boiled eggs.
- Peel the carrot, dip in water and wrap with plastic wrap.
- Cook in a microwave for about 3~4 minutes until softened.
- Combine the ingredients in a bowl.
- Mix well until thickened.
- Cut the carrot into 1 cm half-moons.
- Cut eggs into 8.
- Add carrot and eggs in a ball from Step 4.
- Mix well.
- Serve and sprinkle black pepper and parsley to your liking.
