Simple Carrot and Egg Salad

  1. The ingredients are only 1 carrot and 2 hard boiled eggs.
  2. Peel the carrot, dip in water and wrap with plastic wrap.
  3. Cook in a microwave for about 3~4 minutes until softened.
  4. Combine the ingredients in a bowl.
  5. Mix well until thickened.
  6. Cut the carrot into 1 cm half-moons.
  7. Cut eggs into 8.
  8. Add carrot and eggs in a ball from Step 4.
  9. Mix well.
  10. Serve and sprinkle black pepper and parsley to your liking.
