Salt roasted prime rib

  1. Mix pepper rosemary and thyme in a bowl
  2. In a huge bowl add salt, flour, egg whites and water adding more flour or water until you have a thick paste
  3. Line the bottom of a roasting pan with the salt casing about 3/4 of an inch thick
  4. Rub the entire rib with the pepper mix and place in th pan on the salt mix
  5. coat the rest of the meat with the salt mixture completely...no holes
  6. put roast in a preheated oven at 325 for 20 minutes per pound
  7. remove from oven and let it rest in the pan for about 15 minutes
