Pickled Plum and Shiso Omelette
- 2 Eggs
- 1 Salted plum
- 2 leaves Shiso leaves
- 1 tsp Usukuchi soy sauce
- 1 tsp Milk
- 1 tsp Sugar
- 1 tbsp Mayonnaise
- Mince the plum and finely chop the shiso.
- Beat the egg, add all the ingredients and mix.
- Make sure the mayonnaise isn't lumpy.
- Pour the egg mixture into an omelette pan in 2 batches.
- Cook through on a low to medium heat slowly.
- Be careful not to burn it.
