Pickled Plum and Shiso Omelette

  1. Mince the plum and finely chop the shiso.
  2. Beat the egg, add all the ingredients and mix.
  3. Make sure the mayonnaise isn't lumpy.
  4. Pour the egg mixture into an omelette pan in 2 batches.
  5. Cook through on a low to medium heat slowly.
  6. Be careful not to burn it.
