German Potato Salad
- 2-1/2 lb. red potatoes (about 6) King Sooper's 5 lb For $1.88 thru 02/09
- 2/3 cup water
- 1/4 cup KRAFT Lite Zesty Italian Dressing
- 1 Tbsp. GREY POUPON Dijon Mustard
- 1 Tbsp. olive oil
- 6 slices OSCAR MAYER Turkey Bacon, cut into 1-inch pieces
- 1 onion, chopped Safeway 3 lb For $2.99 thru 02/09
- 1 Tbsp. flour
- 1 Tbsp. sugar
- 1/4 tsp. pepper
- 2 Tbsp. chopped fresh parsley
- Cook potatoes in boiling water 20 to 30 min.
- or just until tender; drain.
- Cool 10 min.
- Meanwhile, whisk next 3 ingredients until well blended.
- Heat oil in large skillet on medium heat.
- Add bacon and onions; cook and stir 4 min.
- or until onions are crisp-tender.
- Stir in flour, sugar and pepper.
- Gradually stir in dressing mixture.
- Cook 1 min.
- or until bubbly and thickened.
- Slice potatoes.
- Add to ingredients in skillet; cook 3 to 5 min.
- or until heated through, stirring frequently.
- Top with parsley.
