Nachos Bell Rarebit

  1. Heat up a large skillet over medium heat.
  2. Add the oil, and then the chili powder and cumin.
  3. Stir a few seconds, and then add the black beans.
  4. Saute until heated through, 3 to 4 minutes.
  5. Pile the chips high on 2 microwave-safe plates.
  6. Add the Mexican cheese and place in the microwave for 15 seconds to melt the cheese.
  7. Sprinkle the warm beans over the chips and cheese.
  8. Then ladle warm Beerbit Sauce over the top.
  9. Sprinkle some green onions, tomatoes, cilantro, jalapenos and some dollops of sour cream.
  10. Serve to your guests while making an "oink" sound.
  11. Melt the butter in a medium saucepot over medium heat.
  12. Add the flour and whisk until blond, about 5 minutes.
  13. Add in the milk and beer and whisk.
  14. Simmer until thick, about 10 minutes.
  15. Then add the Sriracha and jack cheese.
  16. Remove from the heat and stir until the cheese has melted.
  17. Adjust seasoning with salt and pepper.
