Classic Souvlaki

  1. Trim lamb.
  2. Cut into 1 inch cubes.
  3. In a bowl, whisk together lemon juice, oil, garlic, salt and pepper.
  4. Marinate for up to 24 hours in refrigerator.
  5. Room temp, 30 minutes.
  6. Soak wooden skewers at least 10 minutes to prevent charring during cooking.
  7. Remove meat from marinade, Thread meat on skewers.
  8. broil under broiler or BBQ over med-high until done to personal preference.

  11. Serve with your favorite tzatziki sauce and savour the efforts of your labour.
