Marinated Vegetables

  1. Make sure the butter beans are the kind that are firm, not mushy.
  2. Combine all vegetables in a bowl.
  3. Mix remaining ingredients in a saucepan.
  4. Heat to a slow simmer for one minute.
  5. Pour this over the vegetables and stir.
  6. Chill for a few hours or overnight and serve.
