Cheesy Chicken Cubes

  1. Preheat oven to 350 degrees.
  2. Put 2 tablespoons of canola oil in a skillet on med-low heat.
  3. When the oil is warmed, put the diced onion in the oil.
  4. Stir occasionally to cook through.
  5. Blend the eggs in a bowl, and place the breadcrumbs in another bowl.
  6. Submerge the chicken cubes a few at a time in the egg.
  7. Then bread the cubes and place them on a plate to be cooked.
  8. Put the other 2 tablespoons canola oil in another skillet on med-high heat.
  9. when the oil is warm, add the chicken.
  10. Cook until browned, but do not attempt to cook through.
  11. When browned, cook in the oven for 6 minutes.
  12. While the chicken is cooking, add the queso, tobascco, and garlic to the onions.
  13. Stir chicken into mixture.
  14. Serve to hungry people.
