Corn Cakes

  1. In a large bowl whisk together egg and milk.
  2. Add baking powder, masa flour and flour.
  3. Then add all your spices.
  4. Fold in apples and corn.
  5. Heat oil on griddle or non-stick saute pan.
  6. Using a spoon, drop 2 tablespoons of batter in griddle or pan and cook until brown, then turn and cook until the other side is brown.
  7. Serve with chive sour cream and caviar.
