Hot Sauteed Slaw

  1. In large bowl, whisk 2 tablespoons olive oil, Dijon mustard, lemon juice, and salt.
  2. In 12-inch skillet, heat 1 tablespoon olive oil.
  3. Add onion and garlic and saute 7 minutes, or until tender.
  4. Add coleslaw mix and saute, stirring 5 minutes, or until wilted.
  5. Add to dressing and toss well to combine.
  6. Serve hot.
