AMIEs Eggs
- 4 medium eggs
- 2 tbsp butter
- 150 grams buffalo mozzarella, sliced or torn
- 1 fresh basil leaves
- 1 salt and freshly ground black pepper
- Slice off the tops of eggs.
- Place eggs in a mixing bowl and beat with salt and pepper.
- Add the basil leaves.
- Melt butter in a small non-stick saucepan over low-medium heat.
- Add the mozzarella and stir until melted.
- Add the beaten eggs and stir until just set.
- Fill the empty eggs with mixture and top with fresh basil leaves.
- Serve and enjoy!
