AMIEs Eggs

  1. Slice off the tops of eggs.
  2. Place eggs in a mixing bowl and beat with salt and pepper.
  3. Add the basil leaves.
  4. Melt butter in a small non-stick saucepan over low-medium heat.
  5. Add the mozzarella and stir until melted.
  6. Add the beaten eggs and stir until just set.
  7. Fill the empty eggs with mixture and top with fresh basil leaves.
  8. Serve and enjoy!
