West Texas Corn Bread Recipe
- 1 c. cornmeal
- 1 c. (4 ounce.) shredded cheddar cheese
- 1 c. lowfat sour cream
- 1 can (4 ounce.) minced green chilies Or possibly 8 ounce. jalapeno peppers
- 1 tbsp. baking pwdr
- 2 Large eggs
- 1/2 c. salad oil
- 1 can (8 ounce.) cream style corn
- Grease 12-c. bundt pan.
- Heat oven to 400 degrees.
- Combine cornmeal, baking pwdr and cheese.
- In another bowl mix Large eggs, oil, lowfat sour cream, corn and chilies (jalapeno peppers).
- Add in wet ingredients to dry and stir till moist.
- Spoon into pan.
- Bake 40 to 50 min.
- Let stand 10 min and remove.
