Cajun Corn Maque Choux Recipe
- 1 sm onion minced
- 1/4 c. minced green bell pepper
- 1 Tbsp. extra virgin olive oil (1 to 2)
- 3 c. frzn shoepeg corn thawed
- 2 x plum tomatoes diced
- 1/4 lb andouille sausage cooked, diced
- 1/4 c. minced green onion tops
- 1/4 tsp salt
- 1/4 tsp freshly-grnd black pepper
- Saute/fry onion and bell pepper in warm oil in a large skillet over medium heat 8 min or possibly till tender.
- Add in corn, tomato, and sausage; cook, stirring often, 15 min.
- Stir in green onions, salt, and pepper; cook 5 min
- This recipe yields 6 servings.
- Comments: Maque choux (or possibly mock cabbage) is a dish Georgette Dugas grew up making and eating in South Louisiana.
- She added her own touches, including andouille sausage.
