Chilled Lemon Chicken

  1. Preheat oven to 325F.
  2. Stir wine with peel, 3tbs lemon juice, garlic, rosemary and salt in an oven dish that will just hold the chicken breasts in a single layer.
  3. Add Chicken, turn to coat with mixture.
  4. Thickly slice onion into rounds, then seperate into rings.
  5. Scatter over chicken.
  6. Seal with foil.
  7. Bake in preheated oven for 30 mins.
  8. Turn chicken and continue baking for another 40 mins.
  9. Remove from oven.
  10. Leaving the cover on, immediately refrigerate the entire dish until at least cold.
  11. Drain off liquid before serving.
  12. Sprinkle with chives.
