Sausage Muffins
- 12 lb turkey sausage or 12 lb other low fat sausage
- 12 cup onion, chopped
- 12 teaspoon salt
- 14 teaspoon garlic powder
- 12 eggs
- 14 /c green pepper, chopped
- 14 teaspoon pepper
- 12 / c shredded cheddar cheese
- In a skillet brown the sausage and drain off any fat.
- In a bowl, beat the eggs.
- Add onion, green pepper, salt, pepper, and garlic powder.
- Stir in the sausage and cheese.
- Spoon by 1/3 cupfuls into greased muffin cups.
- Bake at 350 degrees for 20-25 minutes, or until a knife inserted near centre comes out clean.
