Shallow-Fried Tofu in Sauce
- 200 grams Silken tofu
- 1 Katakuriko
- 1 Japanese leek
- 2 tsp Sugar
- 1 dash less than 2 tablespoons Soy sauce
- 1 tbsp Sake
- 1 tbsp plus Water
- Wrap the tofu in a paper towel and place it on a plate to drain the excess moisture.
- Make the sauce.
- Coat the tofu in katakuriko.
- Heat sesame oil in a frying pan and pan-fry the larger surface of the tofu.
- Flip them over and continue frying.
- Fry the sides as well (the oil will splatter, so be careful).
- Wipe off the excess oil with a paper towel.
- Pour the sauce over the tofu, and bring it to a boil as you baste the tofu.
- Remove the tofu and let the sauce simmer.
- Top the tofu with the leek and then cover with the sauce.
