Lemony Cream Cheese Muffins with Streusel Topping

  1. Preheat oven to 375F.
  2. MUFFINS:
  3. Line your muffin tin with liners.
  4. In a large bowl, mix together 3 cups of the flour, salt, baking powder and 1 cup sugar.
  5. In another bowl, combine the eggs, oil and milk.
  6. Mix well.
  7. Mix the wet ingredients with the dry until just moist.
  8. Add the juice and zest from the lemon and stir until incorporated.
  9. In another bowl, combine cream cheese and 1 cup sugar.
  10. Mix 1/2 of the mixture gently into muffin batter.
  11. Fill lined muffin tins 1/2 full of batter.
  12. Spoon the remaining cream cheese mixture in center of each batter filled muffin cup.
  13. STREUSEL TOPPING::
  14. 1/2 cup all purpose flour
  15. 1/4 cup softened butter
  16. 1 cup sugar
  17. Mix ingredients until crumbly.
  18. Generously top each muffin with streusel topping.
  19. Bake 25-30 minutes.
