Lemony Cream Cheese Muffins with Streusel Topping
- 3 1/2 cup all-purpose flour
- 3 cup granulated sugar
- 4 tsp baking powder
- 1 tsp salt
- 2/3 cup milk
- 2 large eggs
- 1/2 cup vegetable oil
- 8 oz cream cheese, softened
- 1/4 cup butter, softened
- 1 lemon plus zest ( can use concentrated lemon juice )
- 1 You can always use more lemon if desired. Just add to suit your taste
- Preheat oven to 375F.
- MUFFINS:
- Line your muffin tin with liners.
- In a large bowl, mix together 3 cups of the flour, salt, baking powder and 1 cup sugar.
- In another bowl, combine the eggs, oil and milk.
- Mix well.
- Mix the wet ingredients with the dry until just moist.
- Add the juice and zest from the lemon and stir until incorporated.
- In another bowl, combine cream cheese and 1 cup sugar.
- Mix 1/2 of the mixture gently into muffin batter.
- Fill lined muffin tins 1/2 full of batter.
- Spoon the remaining cream cheese mixture in center of each batter filled muffin cup.
- STREUSEL TOPPING::
- 1/2 cup all purpose flour
- 1/4 cup softened butter
- 1 cup sugar
- Mix ingredients until crumbly.
- Generously top each muffin with streusel topping.
- Bake 25-30 minutes.
