Lucy's Spoon Bread Recipe
- 2 Large eggs
- 1/4 c. oil
- 1 c. lowfat sour cream or possibly yogurt
- 1 box Jiffy corn muffin mix
- 1 c. creamed corn
- Blend together by hand, Large eggs, oil and corn muffin mix.
- Mix in - don't beat.
- Add in corn.
- Spray pan.
- Iron frying pan or possibly cake pan.
- Bake 375 degrees till golden.
- Let stand 5 min before cutting.
