Lucy's Spoon Bread Recipe

• 2 Large eggs
• 1/4 c. oil
• 1 c. lowfat sour cream or possibly yogurt
• 1 box Jiffy corn muffin mix
• 1 c. creamed corn

1. Blend together by hand, Large eggs, oil and corn muffin mix.
2. Mix in - don't beat.
3. Add in corn.
4. Spray pan.
5. Iron frying pan or possibly cake pan.
6. Bake 375 degrees till golden.
7. Let stand 5 min before cutting.
