Cheesy Chicken Rice Bake
- 1- 1/2 cup Cooked White Rice
- 8 ounces, weight Chopped Cooked Grilled Chicken
- 4 ounces, weight Cream Cheese (chive And Onion Is Good!)
- 1 whole Egg
- 2 cups Corn
- 1- 1/4 cup Mexican Cheese, Divided
- Coarse Pepper (optional)

- Preheat oven to 375 degrees F. 2.
- Cook rice according to package directions.
- 3.
- Prepare grilled chicken breast according to your preference.
- 4.
- Mix cream cheese and egg in a large bowl until well blended.
- Then stir in rice, corn, and 3/4 cup of the cheese.
- 5.
- Pour into a greased casserole and sprinkle with remaining cheese.
- (Sprinkle coarse pepper on top if you would like.)
- 6.
- Bake for 20 to 25 minutes until the cheese is melted.
