Bistro Bagel Meatless Cheeseburger

  1. Add oil to medium nonstick skillet.
  2. Add onions; cook and stir on medium heat until softened.
  3. Remove from skillet; do not wash skillet.
  4. Coat skillet with cooking spray; add mushrooms; cook, turning occasionally until lightly browned.
  5. Stir in cooked onion and vinegar.
  6. Heat meatless cheeseburgers as directed on package.
  7. Top bottom half of each bagel with 1 burger, 2 lettuce leaves, and 1/4 of mushroom/onion mixture.
  8. Cover with remaining bagel halves.
  9. Complement meal with yogurt (6 oz per person) topped with 1/4 of the strawberries.
  10. Serve an 8 fl oz glass of water per person with the meal.
