Bistro Bagel Meatless Cheeseburger
- 1 Tbsp. extra virgin olive oil
- 1/2 medium red onion, sliced
- 4 fresh portobello mushrooms, cut up
- 3 Tbsp. balsamic vinegar
- 4 BOCA Cheeseburger Veggie Burger
- 4 small whole wheat s, split and toasted
- 8 piece lettuce leaves
- 24 oz. nonfat yogurt, favorite flavor
- 20 large fresh strawberries, sliced
- 32 fl oz (4 cups) drinking water
- Add oil to medium nonstick skillet.
- Add onions; cook and stir on medium heat until softened.
- Remove from skillet; do not wash skillet.
- Coat skillet with cooking spray; add mushrooms; cook, turning occasionally until lightly browned.
- Stir in cooked onion and vinegar.
- Heat meatless cheeseburgers as directed on package.
- Top bottom half of each bagel with 1 burger, 2 lettuce leaves, and 1/4 of mushroom/onion mixture.
- Cover with remaining bagel halves.
- Complement meal with yogurt (6 oz per person) topped with 1/4 of the strawberries.
- Serve an 8 fl oz glass of water per person with the meal.
