Warm Cauliflower and Parsley Salad
- 4 cups cauliflower florets
- 2 garlic cloves, mashed
- 14 teaspoon black pepper
- 2 tablespoons drained capers, minced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 14 cup golden raisin
- 12 cup fresh parsley, roughly chopped
- Steam cauliflower.
- Drain and pat dry.
- In a small bowl, whisk together garlic, pepper, capers, oil and lemon juice.
- In large bowl, combine cauliflower and raisins.
- Add dressing and toss to coat.
- Let cool for 15 minutes.
- Add parsley and toss to combine.
