Tri-Colour Stuffed Peppers
- 1 pkg. (340 g) simulated ground beef
- 1 cup instant white rice
- 1 cup frozen corn
- 1 cup salsa
- 1-1/2 cups water, divided
- 1 cup shredded Cracker Barrel Monterey Jack Cheese, divided
- 1 each large red, yellow and green pepper
- Heat oven to 400 degrees F
- Bring first 4 ingredients and 1 cup water just to boil in large nonstick skillet, stirring frequently; cover.
- Remove from heat; let stand 5 min.
- Stir in 1/2 cup cheese.
- Cut peppers lengthwise in half; remove and discard seeds.
- Spoon simulated beef mixture into pepper halves; place in 13x9-inch baking dish.
- Pour remaining water around peppers; cover.
- Bake 30 min.
- Sprinkle with remaining cheese; bake, uncovered, 10 min.
