Zuppa Di Pesce
- 1/4 cup oil
- 1 medium onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, minced
- 1 can (28 oz.) Italian-style plum tomatoes, undrained
- 1/2 cup dry white wine
- 2 Tbsp. chopped fresh basil
- 1 lb. cod fillets, cut into 1-inch chunks
- 1/4 cup DI GIORNO Shredded Parmesan Cheese
- Heat oil in large saucepan on medium-high heat.
- Add onions and garlic; cook and stir 4 to 5 min.
- or until tender.
- Stir in tomatoes and their liquid, the wine and basil.
- Bring to boil.
- Reduce heat to medium-low; simmer 10 min.
- Add fish; simmer an additional 10 min.
- or until fish flakes easily with fork.
- Ladle into serving bowl; sprinkle with cheese.
