sweet potato paratha
- 1/2 sweet potato
- 1 tsp jaggery powder
- 1 cup whole wheat flour
- 1/2 cup water
- 2 tsp ghee or clarified butter
- Steam the sweet potato for 5 mins in microwave and peel off the skin.
- Prepare a soft dough using flour and water.
- While dough is resting, mash the steamed potato and add jaggery.
- Take a small ball of dough- roll it flat roughly.
- Grease a little ghee and spread the filling in middle and close the ends.
- Lightly press the ball in dry flour and roll it thin.
- Put it on a preheated girdle and cook it one side till light brown, then turn and apply ghee .
- similarly smear ghee on other side and keep on flipping every 5 sec till both the sides are cooked.
- Cut the paratha in 8 pcs and serve with date syrup.
