Sig's Onion Cakes with Prawns in Wild Garlic Butter
- 4 medium size onions of choice , peeled and thinly sliced
- 4 tbsp of flour
- 2 tbsp salt
- 1/4 liter of oil
- 1 good pinch of fresh cracked black pepper
- 400 grams fresh large uncooked prawns
- 2 tbsp fresh or 1 tablespoon dried wild garlic
- 1 pinch salt
- 2 tbsp butter
- 1 pinch chilli flakes
- To make the cakes peel the onions and slice the thinly.
- Put into a bowl and sprinkle over the salt
- Mix the salt well into the onions .
- Knead them a short while until they soften.
- Wash under cold water and dry
- Add the flour, eggs and pepper and mix and coat properly until well combined.
- Heat the oil and make little flat cakes with spoons.
- Cook from one side and turn after two minutes then cook a further two minutes until golden brown .
- Put on kitchen paper to drain of the oil.
- In the meantime prepare the prawns .
- Heat the butter to melting point add the wold garlic and hear for about a minute then add chilli flakes and salt if used.
- Add the prawns and heat gently until pink from all sides.
- This does not take long.
- Do not overheat or they will go rubbery
- Serve with the cakes and a side salad
